Add a little Ginger to your life!

Hey guys!

So that recipe that I tried yesterday was a huge hit!! Not only was it healthy and very simple to make, but even the boyfriend thought it was good! The key ingredient is definitely Ginger.  This is such a good root to add to any meal.  It's very good for your immune system and is quite tasty when purchased fresh.  With the weather getting colder (if you are in Canada that is) you want to try everything to keep yourself healthy so add this into a few of  your meals for something different.


Here you go!

Gingered Beef & Vegetables
  • 1 1/2 pounds boneless beef round steak, ,cut into 1 inch cubes
  • 4 medium carrots, cut into 1/2 inch slices (I may use mushrooms next time)
  • 1/2 cup sliced scallions (I used a whole onion)
  • 2 garlic cloves minced
  • 1 1/2 cups water
  •  2 tbsp reduced-sodium sauce 
  • 2 tsps grated fresh ginger - I used about 4 because I love the taste
  • 1 1/2 tsp instant beef-bouillon granules
  • 1/4 teaspoon crushed red pepper
  • 3 tbsp cornstarch
  • 3 tbsp water
  • 1/2 cup chopped red bell pepper
  • 2 cups of frozen or fresh snap peas
  • served with rice - for something different, try serving this with gnocci.  It was delicious!
Directions
  1. In a slow cooker, combine beef, carrots, scallions and garlic. In a medium bowl, combine the  1 1/2 cups of water, soy sauce, ginger, bouillon and crushed red pepper; pour over mixture in cooker
  2. Cover; cook on low-heat setting for 9-10hrs, or on high-heat setting for 4 1/2 -5hrs
  3. If using low heat, increase to high heat.  In a small bowl, combine cornstarch and 3 tbsp of cold water; stir into meat mixture along with bell pepper.  Cover; cook for 20-30 minutes more or until thickened, stirring once. Stir in sugar snap peas, serve with rice. 
I cooked mine for 4 1/2 hours in total; at 4hrs I added the remaining ingredients and it was perfect! Depends on the size of your slow cooker and probably on the age of it.  Mine is only 2 years old.
Give this a whirl! Have all the ingredients ready to go tonight, throw into the slow cooker tomorrow and come home to a hearty home cooked meal that you didn't have to slave over! What could be better!
