Happy Friday!!
I am sure you are all wondering how last nights dinner went and let me tell you, it was great! Such an easy meal to prepare it was very tasty in my opinion!
Here is the recipe, enjoy!
Cajun Shrimp & Rice
Makes 6 servings
- 1 28oz can diced tomatoes
- 1 14oz can chicken broth
- 1 cup chopped onions
- 1 cup chopped green pepper (I used a red one)
- 1 6- to 6-1/4oz package of long grain & wild rice mix (Uncle Ben's) I used 1 cup of white rice that I already had in the house...next time I will use 3/4 cup
- 1/4 cup water
- 2 garlic cloves, chopped
- 1/2 teaspoon Cajun seasoning (I used a full teaspoon)
- 1 poun cooked, shelled & deveined shrimp (if seafood isn't your thing, then try it with chicken! I bet that would be very tasty!
- In a 3 &1/2 to 4 quart slow cooker, combine tomatoes with their juices, chicken broth, onions, bell pepper, rice, water, garlic & Cajun seasoning
- Cover, cook on low-heat setting 5-6 hours or on high-heat setting for 3 & 1/2 hours
- Stir in shrimp into rice mix, cover and cook for 15 minutes longer at high heat setting, sprinkle with hot pepper sauce if desired
Give me an hour or so and I am going to post this awesome video of a ten minute ab workout that works amazing! It covers abs, arms and even a bit of cardio! I tried it yesterday and was pretty impressed.
